Now all Google ads keep showing me the hotel I’ve already booked in Florida. Seriously, why do I need that now?

And yet, ideally, advertising should work differently… why not let me enter the keywords/queries myself that define the themes I want to see ads for. Like things to do in Florida or Disneyland universal studio SeaWorld coupons or rent a car in Florida? And also specify a time after which these queries become irrelevant. Rented a car – went in, deleted the query. Or entered a new one. Or I have some wishes for my birthday, I could list them, and I wouldn’t mind receiving a good offer – after all, some advertiser will mention these keywords somewhere. Let advertisers find me with last minute offers for hotels and stuff. Why doesn’t it work this way?
